Broth families

Tonkotsu is pork bone simmered for hours until it turns milky and thick. Shoyu is a brown, soy-forward broth that often feels lighter. Shio is salt-based and clear, so the aroma and noodles lead. Miso is rounder and nutty, often with a warm finish. Chicken broths split into creamy paitan and clear chintan. Vegetable and mixed bases fit the Other field.

Noodle firmness

Soft noodles lose their bite quickly. Medium holds shape while still yielding. Firm has a spring you can feel when you bite. Extra firm can taste raw to some people, so decide whether it reads as a choice or a mistake. Write your preference in the note so future you remembers.

Rating with a purpose

Use the full scale. A 5 is an okay bowl you would not seek out. A 7 is a good bowl worth a repeat. A 9 or 10 is a bowl you would travel for. Rate the whole bowl, not just the soup or the toppings.
